Jumbo Lump Crab Cake with Old Bay Yellow Corn Relish

2 lbs fresh jumbo lump crab (makes 6-8 servings)
4 oz mayonnaise
2 oz Dijon mustard
2 oz cilantro
4 oz Panko (Japanese bread crumbs)
2 oz clarified butter
2 old bay butter
salt and pepper to taste
--
4 uncooked sweet yellow corns (serves 6-8)
1/2 red onion (diced)
1 red pepper (diced)
1 green pepper (diced)
1 oz Old Bay
2 oz butter
in a large mixing bowl, combine all ingredients gently by hand except the butter (try not to break up the crab meat)
add warm butter last
shape into 4-6 oz cakes
ready for searing on a pan or roasting in the oven

sauté ingredients in a hot sauté pan
season with old bay
salt and pepper to taste
finish with butter and serve
